LEEK LEAF OMELETTE

Ingredients

 

2 outer leaves of leek, finely chopped or cut into pieces

10 g butter

3 eggs

50 ml of liquid cream

20 g grated cheddar

Salt and black pepper

 

Elaboration

 

Preheat the broiler of the oven.

Heat a frying pan over medium heat.

Then add the butter and leeks, and give them about 3 or 4 minutes, stirring, so that the leeks soften.

During this time, mix the eggs and cream, then whisk them for 1 or 2 minutes, so that the mixture puffs up.

Pour it into the pan and stir it so that the raw egg slides to the bottom of the pan.

After 4 or 5 minutes, when the egg is almost done, season it with salt and pepper and sprinkle with the cheese.

Place the pan in the oven and leave it for 1 or 2 minutes, so that the cheese melts.
